Bacon Swiss Chard Quiche is a wonderful snack or main course depending on how you want to serve it. It is full of organic vegetables and fresh ingredients, everything you want in a meal. It is a little bit naughty and a lot of nourishment, what else could you ask for?
Since it is CSA season and I have a bounty of fresh greens, I decided to toss the chard with some very special smokey thick cut bacon (from US Wellness Meats), gorgeous silky cream and eggs (from Udder Milk) all together with this new smooth savory crust and make some quiche, yum. Once I found a good recipe for a gluten free crust, I had to practice with it. It felt like a duty — test it and make sure it is real; make sure I was not dreaming.
I made a couple of large quiche pies that I shared with my neighbors and then used the gluten free dough scraps to make these cute little appetizer size baby quiches. Don’t be fooled by the size, they are very rich and filling.
I found the recipe for the crust in a fabulous book Black Bird Bakery by Karen Morgan. And — US Wellness Meats has the most divine thick cut, smokey bacon I have ever eaten, makes the quiche so special.
