I love burgers and when I was at my dear friend Kathy’s home for dinner with the family, she was making a fun chicken burger recipe that she got from Rachel Ray. It was such a delicious burger full of flavor and mushrooms it got me to thinking…. What about a Mediterranean Burger?
This is a great way to get some healthy fat into your salad without blowing your food plan. A ripe avocado is deliciously creamy and a beautiful addition to your salad or coleslaw, it's extremely versatile and very healthy ~ definitely on the sanctioned list!

It could be sanctioned, if you either left off the coconut whipped cream or seriously limited it ... your choice! Either way ~ it's a gorgeous cake with lots of great flavor and fun, won't last long!
Tropical Fruit Salad is a great way to enjoy the sweetness of fruit and have a beautiful dessert after a perfectly sanctioned meal! I made this one a little extra special by taking some extra time and cutting the fruit into an unusual presentation. It was fun and made for a much more elegant dessert.
I make 2 dozen at a time, they keep in the refrigerator for at least a week which makes getting ready for my day much easier in the morning. It is such a blessing to have these little frittatas available when I am in a rush to get out the front door at 6:00 AM and they satisfy my morning hunger for hours.
Quick Tip: For perfectly boiled eggs every time put your eggs into a pot with cold water, cover the eggs by 1″ –Bring the water to a boil –turn the heat off –cover the pot –set your timer for 10 minutes When the bell rings, pour the hot water down the drain and cool your eggs to stop the cooking. Then begin to peel your perfectly cooked eggs!
