Spicy Chicken Taco Salad
I love Mexican food! Growing up in Texas I developed a deep desire for spicy food and still have it. I decided to forgo the tortilla and chips while maintaining the taste that I love so much in a effort to stay true to my Living Fit Lifestyle ~ and my waistline! Once I made the commitment to let go of the grains, it was really easy to say “no” to the tortillas and chips.
- 1 lb ground chicken
- 1 lb ground turkey
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- 2T EVOO
- TACO SEASONING
- 2T chili powder
- 2T ground cumin
- 2T hot paprika
- 1T chipotle
- ½ t cayenne
- ¼ t salt
- ¼ pepper
- Preheat a stainless steel sauté pan
- Add EVOO and onions to sweat
- Add the garlic, cook for 2 minutes
- Add the ground meat to the pan and begin to cook
- Add the seasoning mix and stir to coat the meat thoroughly
- Finish cooking the meat and allow to cool before adding to salad
