Spicy Chicken Taco Salad


I love Mexican food! Growing up in Texas I developed a deep desire for spicy food and still have it. I decided to forgo the tortilla and chips while maintaining the taste that I love so much in a effort to stay true to my Living Fit Lifestyle ~ and my waistline! Once I made the commitment to let go of the grains, it was really easy to say “no” to the tortillas and chips.


Chicken Taco Salad

My personal updated version of a TACO SALAD
  • 1 lb ground chicken
  • 1 lb ground turkey
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2T EVOO
  • 2T chili powder
  • 2T ground cumin
  • 2T hot paprika
  • 1T chipotle
  • ½ t cayenne
  • ¼ t salt
  • ¼ pepper
  1. Preheat a stainless steel sauté pan
  2. Add EVOO and onions to sweat
  3. Add the garlic, cook for 2 minutes
  4. Add the ground meat to the pan and begin to cook
  5. Add the seasoning mix and stir to coat the meat thoroughly
  6. Finish cooking the meat and allow to cool before adding to salad
