Ingredients
  • 1.5 Cup GF flour
  • 1 T baking powder
  • 1 t baking soda
  • 1 t guar gum
  • 1t cinnamon
  • ½ t nutmeg
  • ½ Cup organic coconut sugar
  • ½ Cup organic coconut milk
  • 2 Lg Eggs
  • 2 t vanilla extract
  • 1.5 Cups grated carrots
  • ¼ Cup dark raisins
  • ½ Cup unsweetened apple sauce
  • ¼ Cup chopped pecans
Instructions
  1. Preheat the oven to 350•
  2. In a large bowl combine the dry ingredients, mix well to combine
  3. In another bowl combine the wet ingredients, stir to mix well
  4. Fold in the carrots & raisins
  5. Mix wet ingredients into the dry, fold to combine
  6. Scoop a portion into a prepared muffin tins lined with paper
  7. Bake for 10 minutes, rotate the pan in 10 minutes and continue for 10 more
  8. Remove from the oven when a toothpick inserted in the middle comes out clean
