Looking for an easy side dish? This Pasta Salad is just the ticket, a little gluten free pasta, mixed vegetables, and the Buttermilk Tomato Dressing. It’s quick, easy and an excellent compliment to your summer grill — chicken, fish or burgers.
This dish is super quick — all you need is a pot of boiling water and about 30 minutes — add some salt and do a quick blanch of your prepared vegetables to set the vibrant color and cook them just a touch. Use that same pot of salted boiling water to cook your pasta — when the pasta is finished, toss it with the vegetables and Buttermilk Tomato Dressing. Taste the dish and adjust the seasoning as needed. You are ready to roll!
I use a gluten free brown rice past (which is completely sanctioned) and whatever vegetables you have and like. I had broccoli, carrots and cherry tomatoes so that is what I used. Use whatever you have on hand and embellish it with your favorite herbs and dressing.
