Spicy Chicken Soup — this is one of the very reasons to have a well-stocked pantry and freezer. When you are in a hurry with little time to spare this body warming soup is so easy and quick to make. It is perfect for a busy weeknight during the fall and winter months.

 

If you have some Classic Bone Broth stored in your fridge or freezer, get it out and warm it up!

 

The next item you will need is some grilled chicken; maybe you had some of the Buttermilk Grilled Chicken leftovers from dinner a couple of nights ago?

 

If not, you can use a rotisserie chicken that you pick up from your local grocer, super easy — just pull the chicken off the bones (and save to make the Classic Bone Broth for next time) or cut your leftover Buttermilk Grilled Chicken into bite-size pieces and set aside for assembly later.

 

Get your desired vegetables ready — add whatever you and your family like — carrots, celery, onion, peppers, zucchini — whatever you have on hand is perfect.  I like to save end pieces from other dishes just for this purpose. Here I used the tops and bottoms of peppers and cut them into star shapes for fun using vegetable cutters, a great idea to do with your children. And, I had a few leftover carrots pieces from making Asian Slaw. I threw all the vegetables in the pot with the Classic Bone Broth, added a scallion and 1/2 jar of my favorite salsa. I let the both heat up and cook the vegetable al dente then added the chicken pieces to heat through.

 

And, the result is a gorgeous pot of Spicy Chicken Soup! You can apparently make this soup as spicy as you like it or not for the kids, it all depends on the salsa that you use. It really couldn’t be easier.
