As you may know, I have an Italian mother and she was quite an excellent cook. I loved to hang out in the kitchen with her when she was making something classically Italian, the smell was alluring and captivating.  It didn’t really matter what meat was being used in the sauce, beef, pork, chicken — it all seemed to come together in the tomato base.  I think the attraction began with the onions and garlic sweating in a little butter and oil, that gets me every time, even today.

 

Yea, I am pretty sure my love of food began with the smell of Italian sauce simmering in the kitchen.

 

This dish is a much lighter version of one I had as a kid.  I am using ground chicken mixed with aromatics and vegetables served over zucchini linguine dressed with a little clarified butter and seasoning; it’s clean, fresh and satisfying.  It’s also gorgeous and perfect for an elegant dinner party or a romantic dinner for two!

 

If you want to use the larger peppers, they are easier to stuff and you could make this recipe a little more robust by adding rice to the stuffing mixture (and orzo works well too if you don’t have an issue with gluten). You can also dress the ‘linguini’ with a marinara sauce or a little bolognese if you are feeding a heartier, hungrier group.  There are lots of small changes you can make to personalize this dish — I also like to add carrots to my mix of ‘linguini’, they add beautiful color, more texture and a little sweetness.
