Sunday Brunch ~ ahhh what memories!
We always had a BIG Sunday Brunch at our house after church.
Mom would put it all out on the table ~
- Grits
- Eggs
- Bacon
- Sausage
- Hash Browns
- Toast
- Biscuits
- Pastries
- Fruit
OMG ~ it was delicious and certainly set the tone for the day. Get up early and go to church, come home, change clothes and Mom would have it all organized and on the table before we knew it. It was a lot of fun and I am absolutely sure that these meals were where my love of food and sharing came from. It wasn’t fancy, just good food shared with people that we cared about and that’s what made it special.
Today, it’s still a great pleasure for me to cook and share meals with my friends and loved ones. I just don’t make quite so much food, it’s more about the friends and guests. I strive to keep the dishes healthy, balanced and delicious ~ after all, what fun is it to eat healthy if it doesn’t taste good?
This is a simple breakfast that I like to enjoy with Marc when we have the time to sit and relax a bit. He will often cook breakfast and allow me to work on the menu for the week, organizing recipes and shopping lists, and then we sit down with our coffee, tea, and breakfast to enjoy leisurely together.
Here we each have ~ 1 egg, 1 chicken sausage link, and 1 whole zucchini grilled. It is a perfectly sanctioned meal and very satisfying. Do I miss the grits and hash browns? Absolutely, but not enough to eat them on any kind of regular basis and honestly, I don’t really miss the toast or biscuits either. With the inclusion of the vegetables, I feel very satisfied and with very good energy after. Marc likes broccoli more than zucchini, so we will vary the vegetables each week and include mushrooms, asparagus, broccoli or spinach. Which vegetable you choose is not really important as long as you enjoy it and make adding more vegetables into your overall food plan a healthy habit!
