Eating whole organic vegetables is essential to healthy living and your daily lifestyle. I enjoy my vegetables in a variety of ways, which keeps things from getting too boring. In the summer, my favorite way to eat my veggies is a fresh chopped salad and every salad needs to be well dressed when it comes to the party!
Our new favorite is — Tomato Mustard Dressing!
What I usually do is mix up several batches of salad dressings each week so that I have plenty of fresh wholesome options to choose from without all the additives the grocery store variety would provide.
This one is Marc’s current favorite!
Tangy tomato mustard…. which is interesting because he doesn’t like to eat tomatoes. This recipe provides a healthy compromise and a tasty way for him to get all the health benefits of tomatoes.
- 1 pint of organic cherry tomatoes
- 2 T dijon mustard
- ½ cup red wine vinegar
- ½ cup EVOO
- s/p to taste
- Throw the first 3 ingredients into the blender and puree
- Slowly drizzle the oil into the blender while running to emulsify
- taste and season as needed
Just the right amount of tang and easy to zip up in your blender – perfect for a fresh sanctioned salad!
Super easy and so much better than anything in a bottle from the store!!
