Vegetable Linguine is just what it sounds like! Long thin strips of vegetables cut and cooked to replace pasta. It’s a gorgeous, nutritious and delicious way to eat vegetables and enjoy your favorite pasta sauces. It’s amazingly easy and quick, prefect for a weeknight dinner and great way to get your family to eat more vegetables. If you want to add some grains to your dinner, simply mix the vegetable linguini with a whole grain linguini and your will boost your nutrition and satisfaction.

i have added a similar dish to my menus lately. it’s raw zucchini noodles w/marinara sauce. all raw and i add some nutritional yeast for protein and additional vitamins. this is a complete meal and delicious!
