If you are looking for a vegetarian choice for a cocktail party, sides for dinner or something special for a buffet ~ these stuffed mushrooms and grilled veg are the perfect choice!

 

They are simple, quick and very satisfying. The grill brings out the sweetness in the vegetables which will turn your children into lovers of veggies and the mushrooms are stuffed with the deep flavor of more mushroom ~ I used the Mushroom Duxelle  recipe to prepare the stems that I removed from the button and cremini mushrooms. It is a great way to use every piece of your mushroom and limit your kitchen waste, saving you money and boosting your vegetable intake!

 

To grill the vegetables, simply drizzle with your favorite oil, salt & pepper and grill to your desired doneness. Or, you can prepare a marinade for added flavor ~ use whatever spices your family likes and enjoy.

 

If you want to turn this into a sanctioned meal and keep it vegetarian ~ grill some tofu or paneer to add to the platter or add cheese to the stuffed mushrooms. If you have a desire for some light protein the Mediterranean Burgers will go beautifully with these vegetables or the Chicken Dijonnaise is another great option.
