Some where along the line I found this recipe and fell in love! Grilled Chicken Dijonaise has been my go-to recipe anytime I am having guests and want a juicy finger licking dish.  I have been cooking this dish for so long I cannot remember where I found the recipe.  It is super easy and incredibly flavorful — everyone loves it.

 

This recipe works particularly well with boneless – skinless chicken breast, the marinade ensures that the meat will be juicy every time and it is so simple all you need is a few basic ingredients that you probably already have around your kitchen.

 

Dijon Mustard, Mayonnaise, Tarragon, Thyme — fresh or dried, salt and pepper — that’s it!

 

Mix equal parts of the Mustard and Mayoadd equal parts of tarragon & thyme — a little salt & pepper to the M/M mixture and then add your chicken.  The exact quantities will depend on how much meat you need to cook.  You can use the whole breast or cut it into strips or cubes, this technique is very flexible. The only thing that will change is the cooking time, depending on how you cut your meat.

 

Leave the meat in the marinade anywhere from 4 hours to overnight.  You can do this in the morning before work and come home with the meat ready to cook.  Bring the meat to room temperature (take it out of the fridge for about a 1/2 hour or so while you get a salad ready) and then cook the meat on your grill or under your broiler.  It’s an excellent addition to a summer salad, light & juicy — perfect for dinner al fresco.
