This is a classic southern dish that is saucy, spicy and fully sanctioned for our healthy living game. It utilizes lean, white meat chicken, lots of fresh vegetables, and just the right combination of spice ~ Paleo and figure friendly for all of our gamers!
- 2 bone-in double chicken breasts
- 1 large sweet onion, chopped
- 1 large sweet pepper, red, yellow or orange, chopped
- 2 stalks celery, chopped
- 1T EVOO
- 1 28 oz can of organic diced tomatoes
- 1 Cup white wine
- 2 Cups classic bone broth
- 4 cloves garlic, chopped
- 2 bay leaves
- 1T harissa
- 1 T worcestershire sauce
- juice of 1 lemon
- Preheat the oven to 350•
- Prepare chicken breast for roasting, s/p
- Roast for 30 minutes and take out to cool
- Begin to make the sauce by sweating veg and garlic in EVOO until soft
- Add Wine and reduce
- Add Bone broth and reduce again
- Add the diced tomatoes and spices, simmer for 20 minutes to combine flavors
- Debone the chicken (save the bones for bone broth)
- Cut chicken into bite size pieces and add to the pot for 10 minutes to finish cooking
- Remove the bay leaves and taste
- Adjust seasonings as needed
- Serve with your favorite sides and enjoy
