These spicy little muffins are amazingly reminiscent of muffins mom used to make for us to have for a quick breakfast or snack at school before lunch.  They are fat free, fresh and full of apple-cinnamon flavor. Just the right amount of spice and extra special served warm with a sugar free all fruit jam.

 

Apple Butter Muffins

Ingredients
  • 1 Cup GF flour
  • 1 t baking soda
  • 1 T baking powder
  • 1 t guar gum
  • ½ t cinnamon
  • 1 Cup Apple Butter
  • ¼ Cup Applesauce
  • ¼ Cup raw organic honey
  • 1 Cup FF Buttermilk
  • 2 Lg Egg Whites
  • ½ Cup raisins
Instructions
  1. Preheat the oven to 350•
  2. Combine the dry ingredients, stir to mix well
  3. Whisk together the wet ingredients
  4. Mix wet and dry ingredients to combine
  5. Fold in the raisins
  6. Scoop into paper lined muffin tins
  7. Bake for 18-20 minutes
  8. Allow to cool for 5 minutes
