These spicy little muffins are amazingly reminiscent of muffins mom used to make for us to have for a quick breakfast or snack at school before lunch. They are fat free, fresh and full of apple-cinnamon flavor. Just the right amount of spice and extra special served warm with a sugar free all fruit jam.
- 1 Cup GF flour
- 1 t baking soda
- 1 T baking powder
- 1 t guar gum
- ½ t cinnamon
- 1 Cup Apple Butter
- ¼ Cup Applesauce
- ¼ Cup raw organic honey
- 1 Cup FF Buttermilk
- 2 Lg Egg Whites
- ½ Cup raisins
- Preheat the oven to 350•
- Combine the dry ingredients, stir to mix well
- Whisk together the wet ingredients
- Mix wet and dry ingredients to combine
- Fold in the raisins
- Scoop into paper lined muffin tins
- Bake for 18-20 minutes
- Allow to cool for 5 minutes
