As the weather is cooling off faster each week, we really need to think about more robust meals to keep us warm, nourished and satisfied. If you like curry, you can adapt this recipe to any protein that suits your taste. Most of my clients are addicted to white meat chicken and that is what we use the most often as our lean protein choice for a fully sanctioned meal, feel free to adapt with turkey, shrimp, beef or tofu.

 

 

If you have a pint of Classic Bone Broth in the freezer, a jar of green curry paste, some white wine,fresh grated ginger, minced garlic, coconut milk and lime — you’ve got the makings of a great curry sauce and dinner in a flash. You can add a rotisserie chicken from the market or roast your own, use fresh or poached shrimp; anyway you go – dinner will be hearty and satisfying.
