What could be better for a busy week night than a super fast, easy, satisfying, fully sanctioned meal?
I am all for quick grilling a lean protein and throwing it together with some fresh veggies, homemade salad dressing and possibly a soup. This is a perfect example ~ Simple Grilled Chicken Salad with arugula, red onion, tomato and a light balsamic dressing. It hits all the notes, quick, easy, delicious and sanctioned.

My favorite easy weeknight dinner is a slice of my yummy turkey meatloaf (packed with lots of veggies) wich a side of either zuchini and green beans or asparagus and yellow squash. So easy and meatloaf is made ahead, lasts 5-6 days for a single person. Tonight I am defrosting a wild caught salmon filet and will put the garlic flowers prep on it to bake and serve with a salad.
