For an easy make – ahead meal that you can take out of the fridge and reheat, casseroles are the ticket. One of my favorites is Lasagna, you might have already noticed. I have a few criteria for a good meal and having company over …

 

  • It has to be tasty!
  • It has to be relatively easy, make ahead
  • It has to be healthy and fun

 

When I am having company, the last thing I want to do is spend my time in the kitchen while my guests are sitting in the other room waiting for me to bring something to eat… not me.  I strive to create a menu that is easy for me to make ahead of time, elegant to serve, finger licking good to eat and as healthy as I want to keep myself together. I definitely don’t want people to say “ewww, it’s healthy” and be uncomfortable for any reason. I like to provide lots of fresh vegetables, something a little unexpected and be able to sit around the table with pleasure enjoying the food and company.

 

So for a lunch meeting I made Vegetable Lasagna and a light salad — it was a full meal and very satisfying!
