This is a great way to get some healthy fat into your salad without blowing your food plan. A ripe avocado is deliciously creamy and a beautiful addition to your salad or coleslaw, it’s extremely versatile and very healthy ~ definitely on the sanctioned list! This was a collaborative effort ~ and the results are amazing 🙂

- 1 Ripe avocado
- ¼ Cup EVOO
- 1 bunch of cilantro
- 1 Lemon, juice of
- ¼ Cup of apple juice
- s/p
- Put it all into a high powered blender or food processor and wiz away to desired consistency. Taste and adjust the seasonings for your preferences.
