When I was planning a dinner party and looking for something healthy, delicious and a little different, I found this recipe and decided to try it. I was initially inspired by the recipe in The Food You Crave book by Ellie Krieger. I didn’t have the exact ingredients on hand and didn’t want to be restricted, so I improvised!
Grilled Zucchini Rolls are very adaptable. You can use any soft cheese that you like, or even leave it out. Try hummus instead of cheese, use arugula instead of basil, be creative and use whatever you have that sounds good to you!

- 1 large zucchini
- 1 oz softened goat cheese
- 1 lemon, zest & juice
- 10 fresh basil leaves
- 1 roasted red pepper - drained/ dried
- ¼ cup fresh arugula
- 1 t dried thyme
- salt
- pepper
- Heat a non-stick grill pan & spray with organic coconut oil
- slice your zucchini lengthwise on a mandolin
- salt & pepper your zucchini
- grill the zucchini to create grill marks - approx 2 min per side
- take zucchini off grill and blot on paper towels
- blot the roasted red pepper too... dry it off and slice into thin strips
- Combine softened goat cheese, lemon zest & juice, dried thyme, s/p
- mix well
- Begin to assemble:
- lay out your zucchini, smear with a little goat cheese mixture
- top with roasted red pepper strips, basil leaves, arugula and roll!
- Viola!
These are so good – tangy, lemony and delicious…. I usually make them for a dinner party platter…. have extra napkins handy, they are a little messy and that’s part of the fun 🙂
