- 4-5 Bananas - roasted in their skin
- 1.5 Cups of GF flour
- 1T baking powder
- 1t baking soda
- 1t guar gum
- 1t salt
- 1t cinnamon
- ¼ cup honey
- ¼ cup melted coconut oil
- ½ applesauce
- ½ cup milk
- 1 Large Egg
- ½ Cup chopped walnuts
- Preheat the oven 350•
- Put bananas in a oven proof pan, poke a few holes in each
- Roast for 25-30 minutes and let cool
- Bring all liquids to room temperature
- Mix the dry ingredients - flour, baking powder, baking soda, guar gum, cinnamon & salt, whisk to incorporate
- Mix the wet ingredients - egg, applesauce, honey, milk, roasted bananas, coconut oil, whisk to incorporate
- Add the wet ingredients to the dry
- Fold in the chopped walnuts
- Portion into prepared muffin pan, lined with paper
- Bake for 10 minutes, rotate the pan and bake an additional 10 minutes
- Allow to rest in the pan for 10 minutes then place on cooling rack and allow to cool completely before eating.

Roasted Banana Muffins
While these; little bananas don’t look very appealing right here, let me assure you that the depth of flavor you get by roasting the fruit is amazing and utterly wonderful. Add some walnuts or pecans and a little cinnamon ~ you’ve got a real treat that is particularly wonderful with a hot cup of tea or coffee. Kids really love these too!
